Coconut oil is used widely in Asia, and its exotic flavour makes it a perfect choice. You can buy it in most health food stores and it's great to include in a healthy diet. If Coconut isn't your thing, these wonderfully mildly spiced, sweet potato wedges are great cooked with vegetable oil too. This recipe makes a fantastic pre-dinner nibble.

P r e p a r a t i o n
Peel and dice the sweet potato into 2-3 cm wedges (approx) then add to a bowl with the paste and the oil, mix to coat evenly and add to the Actifry. Set for 40 minutes and cook, at the last 5 minutes add the coconut. When golden brown and crispy, take out of the Actifry then sprinkle over the coriander.
